Palm Kernel Oil

Palm kernel oil is an edible plant oil derived from the kernel of the oil palm tree Elaeis guineensis. It is related to other two edible oils: palm oil, extracted from the fruit pulp of the oil palm, and coconut oil, extracted from the kernel of the coconut. Palm kernel oil is semi-solid at room temperature, more saturated than palm oil and comparable to coconut oil. It is popularly used in commercial cooking and frying because it remains stable at high cooking temperatures and is lower in cost than other oils while allowing for a longer shelf life than other vegetable oils. Palm kernel oil is used in manufacturing such edible products as margarine, ice cream, chocolate confections, cookies, and bread, as well as many pharmaceuticals.
